Ginger Citrus Salmon Salad

A flavor packed, easy to make, and high protein salad is hard to beat. Let’s get right into it.

Ginger Citrus Dressing 
1 1/2 tsp olive oil
1 tsp apple cider vinegar
1 tsp honey
1/2 tsp grated ginger
1/2 tsp minced garlic
Juice of a whole orange
Juice of half a lime
Pinch of salt and pepper

1. Combine all ingredients in a mix bowl and whisk until completely blended and set aside

Citrus Salmon 
4-6oz salmon, skin removed, rinsed and patted dry
Spanglish Asadero All Purpose Seasoning & Bold Citrus Marinade
Fresh Cracked Pepper
2 tsp avocado oil

1. Rub salmon in oil.
2. Apply generous amount of Spanglish seasoning (about 1/2 tsp per side)
3. Salt and pepper to desired taste
4. Grill over medium high heat 3-5 minutes/side or broil for 12-15 minutes.

Salad Assembly 
1. Toss 2 cups of spring salad mix in a large mixing bowl with 2 TBSP of dressing. Coat until salad is evenly coated.
2. Transfer to a large bowl or plate.
3. Garnish with slivered almonds and sliced grape tomatoes
4. Add grilled salmon
5. Add boiled egg(s) [optional]
